Denominazione: Recioto Classico della Valpolicella DOCG

Intense ruby red color, with aromas of red berry fruit jam and spices. The taste is round, warm and enveloping, the rightly acidulous and tannic finish leave the palate dry.

Production area: Negrar di Valpolicella

Grapes: Corvina, Rondinella and Molinara dried until January

Type of soil: Calcareous

Altitude: 300 m a.s.l.

Winemaking and aging process: Fermentation with selected yeasts at controlled temperature (24 ° C.) takes place in a horizontal vinifier for about 10 days. The aging of the wine takes place in 1° and 2° barriques passage for about 24 months and 6 in the bottle.

Withering: With natural method in well-ventilated rooms with periodic control of the health of the grapes and pressing according to the vintage in january.

Residuo zuccherino: 90-120 gr./l depends on the vintage

Alcohol content: 13,5-14,5% vol. depends on the vintage

Pairings: Particularly interesting with spicy cheeses; dessert better if not filled, 70% dark chocolate or for meditation at the end of the meal.

Recommended serving temperature: 16°C

Bottles produced per year: about 5000 of 0,375 l
